1.) Heat olive oil in a large pot over medium-high heat. Add the onion and garlic powder and cook until onion starts to soften and becomes translucent. Add the ground turkey and cook, breaking apart until turkey is cooked all the way.
2.) Add all the seasonings (chili powder, cumin, salt and pepper) and stir for 30 seconds so ground turkey absorbs all the flavors.
3.) Add the rest of the ingredients (tomato paste, chicken broth, crushed tomatoes, beans and corn). Bring to a boil, then reduce heat to low and simmer for 30-45 mins. Once done, taste and add more seasonings to taste if necessary.
4.) Let cool then separate evenly into meal prep containers (about 2 cups each), and add toppings if using. Store in airtight containers for up to 5 days in the fridge.
