I remember when I lived in LA a few years ago, one of my roommates made stuffed bell peppers and it was the first time I tried them. Fast forward to today and there are so many different versions for stuffed peppers. Not sure why it took me this long to try to make them, but I will definitely be making them again!

For this recipe, I kept it simple and used ground chicken. You can use ground turkey, ground beef, tofu, etc. And stuff them with your favorite ingredients including rice or quinoa.

My version is simply made with ground chicken, black beans, and cheese and I added jasmine rice on the side.

What you will need:

-2 bell peppers, cut in half long ways and seeded

-1/2 lb of ground chicken or your favorite protein

-1/2 can of black beans

-4 tbsp of shredded cheese

-Oven pan

1.) Preheat oven to 350 degrees

2.) Cook ground chicken on stove top for about 20 mins on medium heat or until its no longer pink

3.) Drain and rinse black beans

4.) Add ground chicken, black beans and cheese evenly to peppers

5.) Place stuffed peppers on oven pan and cover with foil

6.) Cook for 20 minutes covered, remove foil and leave in oven for another 10 mins
