Fall is around the corner and I am inspired by all things cinnamon and pumpkin in the kitchen! I must admit, growing up summer was my favorite season, but I am definitely a bigger fan of fall now. Pumpkin bread is one of my favorite fall treats.
Healthy eating is not about heavily restricting yourself and completely avoiding all the good food, but instead its about finding a balance where you can still enjoy your favorite things. I like to play around with recipes and find healthy alternatives, which is what I've done with this bread.
While most store bought pumpkin bread is packed with calories (about 400 calories per slice!), this contains less than half and still tastes great! Hope you all give it a try this season. Hello September!
Ingredients you will need:
1/3 cup olive oil
1/2 cup honey
1 cup pure pumpkin
1/4 cup milk of your choice
1 1/2 teaspoons of pumpkin spice blend
1 teaspoon of baking soda
1 teaspoon of vanilla extract
1/4 cup of sugar
1/2 teaspoon of salt
1 3/4 cups of flour (regular or whole wheat)
1.) Preheat oven to 325 degrees
2.) Stir oil and honey together until well blended. Add eggs and blend together.
3.) Add pure pumpkin, milk, pumpkin spice, baking soda, vanilla and salt, and whisk until blended. Stir in flour.
4.) Grease 9x5 inch pan with olive oil or spray.
5.) Add batter into greased pan and sprinkle cinnamon on top.
6.) Bake for 55 minutes or until knife inserted in the middle comes out clean.
7.) Let cool and then serve or store in refrigerator to eat along with your meal prep! Will last 4-5 days if refrigerated and sealed thoroughly.
