These energy bites taste like cookies, require no baking, and store well in the fridge for several days. Kids love them too! Who doesn't love cookies right?
They are the perfect snack for in between meals or as dessert. Sweet and savory!
Just like with overnight oats, you can make several versions of these and customize them to your liking. The base ingredients are oatmeal, honey, and peanut butter. My version also contains chocolate chips, and chia seeds.
I've seen many versions of these with flax seeds, shredded coconut, white chocolate chips, M&M's, almond butter, you name it! I say just use whatever you have in your pantry and experiment. The cool thing is you can make a batch of these ahead of time and eat them throughout the week or take them on your next road trip.
Here's the exact recipe I used:
1 cup rolled oats
1/4 cup of chia seeds
1/4 cup chocolate chips
1/2 cup natural peanut butter
1/3 cup honey
And now for the 3 easy steps...
1.) Mix all ingredients together in a bowl
2.) Refrigerate for at least 1 hour
3.) Roll into balls and enjoy! Refrigerate or freeze the remaining energy bites.
