Vegetarian spinach pasta salad with olive oil

This recipe is quick and easy to make, healthy and budget friendly. I used the Banza Chickpea pasta, which is a healthier alternative to regular pasta as it has less carbs and more protein and it's plant-based.


  • 8 oz. of penne pasta
  • ¼ red onion, diced
  • 1 teaspoon garlic powder or to taste
  • Salt & pepper to taste
  • 2 cups baby spinach
  • 1 cup grape tomatoes
  • 3 tablespoons olive oil*

*Add olive oil right before serving.


  1. Cook pasta according to package instructions.
  2. Once pasta is cooked and drained, add it to a large bowl along with the rest of your ingredients listed (reserve olive oil for later if not serving right away).
  3. Toss all ingredients together and season with salt and pepper to taste
