This recipe is quick and easy to make, healthy and budget friendly. I used the Banza Chickpea pasta, which is a healthier alternative to regular pasta as it has less carbs and more protein and it's plant-based.
- 8 oz. of penne pasta
- ¼ red onion, diced
- 1 teaspoon garlic powder or to taste
- Salt & pepper to taste
- 2 cups baby spinach
- 1 cup grape tomatoes
- 3 tablespoons olive oil*
*Add olive oil right before serving.
- Cook pasta according to package instructions.
- Once pasta is cooked and drained, add it to a large bowl along with the rest of your ingredients listed (reserve olive oil for later if not serving right away).
- Toss all ingredients together and season with salt and pepper to taste
